  1. What is Couverture Chocolate, and how is it different from Compound Chocolate?

    A. Couverture chocolate is a very high-quality chocolate that contains a higher percentage of cocoa butter (32–39%). 

    Couverture Chocolate Couverture chocolate is the real chocolate, is made up of cocoa butter and chocolate liquor. This translates into a higher quality of chocolate that requires tempering when melting it down. Tempering is the process of slowly melting, then cooling the chocolate so it keeps a shiny texture. 

    Compound Chocolate Unlike couverture chocolate, compound chocolate  (we call them as fake chocolate) uses cocoa powder, instead of chocolate liquor and oil, instead of cocoa butter. This means compound chocolate can be melted down without tempering and will still set up just fine. 

    couverture chocolates are free of harmful Trans fats, making them healthy and superior tasting. Compound chocolate may be cheaper, but it's filled with hydrogenated fats instead of pure cocoa butter. This compromises the health benefits of cocoa and increases cholesterol levels.1 kg of Coverture can cost you anywhere between Rs 1200 to 2000, while compound Chocolate cost only Rs100 to 200.
